I found an udon recipe in a super old cookbook of mine. I tried to make it but I failed! It tasted just right but I couldn't cut it thin enough to cook I think. I tried to go as flat/thin as possible but they still become VERY thick than normal udon.

8oz (2 cups) flour
15ml (1 tsbp) salt
150ml (2/3cup) water

it said to punch it 100 times after kneading, cover 2 hours, roll out, flour the top, fold over like an S, cut and boil 25-30.

I've been working on an udon recipe, but I'm not satisfied with the results. I'll let you know once it's perfected =)
