I love udon noodles, so I try to use them in a lot of recipes. Besides using them in curry and soup, I also like Stir-fry udon (Yakiudon). It’s my yakisoba alternative. I use the Otafuku brand yakisoba sauce from the Japanese market. If your market doesn’t carry that sauce, okonomiyaki sauce is also great.

Yakiudon is very quick and easy to make and great for days when you don’t want to make a feast!

Ingredients:

1 package frozen udon noodles (thawed)
4 oz choice of meat (I used frozen cooked shrimp)
1 green onion (chopped)
2 oz sweet onion (sliced)
2 shiitake mushrooms (sliced)
2 oz bell pepper (sliced or cubed)
1 tablespoon oil
1/4 teaspoon ground pepper
1 to 2 tablespoon yakisoba sauce

Makes 1 to 2 servings

Step 1: Thaw frozen udon in cold water until the noodles separate. Drain water and put aside. Sliced the vegetables and mushroom.

Step 2: Heat oil in large pan or wok. Add onion, bell pepper, and shiitake mushroom, and sauté until onion becomes translucent. Add ground pepper, shrimp, and green onion and sauté another minute.

Step 3: Now add the thawed udon noodles and stir and sauté for another minute. Then add the yakisoba sauce. Stir well so the noodles don’t stick.
