Yum, green tea flavored desserts! I wanted to make green tea ice cream, but since it’s winter, I decided to make green tea cookies. They were a hit over the holidays!

I used Matcha Green Tea Powder Green Tea Cookie Recipe which has a sweeter, deeper flavor than other green tea powders. You can buy Almond Meal Green Tea Cookie Recipe or ground your own almonds.

Ingredients:

1 stick Unsalted Butter (113 grams)
45 grams powdered sugar
180 grams cake flour Green Tea Cookie Recipe
(Cake flour preferred, but all-purpose flour works fine)
50 grams Almond Meal Green Tea Cookie Recipe
1 tablespoon Matcha Green Tea Powder Green Tea Cookie Recipe
extra powdered sugar to dust

Step 1: Preheat oven to 350 degrees F. Put almonds on a piece of foil and bake for 8 to 10 minutes. Take almonds out, but leave oven on for the cookie. Finely grind the almonds in a food processor. There can be small pieces. Mix the ground almonds with flour and put aside.

Step 2: Mash cold butter in a large mixing bowl until slightly creamy. Using warm butter will cause the texture of the cookie to be cakey. When butter is creamy, add powdered sugar and mix well.

Step 3: Add Matcha Powder to the mixture and mix again.

Step 4: Add the almond flour mixture and mix until mixture is green and a messy dough forms. Knead the dough for a minute or until clean.

Step 5: Divide the dough into 16 pieces and roll each piece into a ball. Put each ball on a cookie sheet over a flat baking pan. Bake at 350 degrees F for 20 to 25 minutes (I bake them for 22 minutes exactly).

Step 6: Cool cookies on wire rack and dust them with powdered sugar to serve.

      Thank you! I’ve used other brands of matcha powder, but the color always came out looking too neon green. The maeda-en matcha powder tastes and looks better :)

    would this come out the same if i refrigerated the dough for a day or two before baking it?
    I’m going to try this for mother’s day, it looks great!

      Hi Jamie, it should work fine with refrigerated dough. Just check once in a while to see if the dough dries out (since the dough doesn’t contain a lot of moisture). Wrap it tightly :)

    Can I substitute matcha green tea powder with ground green tea leaves?

      Hi~ I wouldn’t recommend it unless the tea leaves were grounded like powder. Using the tea leaves might give an unwanted grainy texture. Matcha works better since it’s powdery :)

    thank you for the recipe! these are really good! this is the first time i tried a recipe with green tea, though getting the matcha powder was a pain. i want to try the mousse cake recipe next :)

      I’m glad your cookies turned out well :) Hope the mousse cake turns out great too!! I find it easier to order the matcha powder in a bundle. It’s cheaper and you can always make cold or hot tea if you have too much~
